Coming back to the rich and royal Thai Chicken Curry which has often pulled you to try almost all the Thai restaurants in London. Here is a quick and easy recipe to make your favourite Thai dish at home; it may not come out superb in the first go. So the key to great taste lies in practice.

You will need shallots or onions, finely sliced lemongrass, your choice of Thai curry paste, chicken pieces, fish sauce, sugar, kaffir lime leaves and coconut milk.

Begin by peeling and cutting shallots or onion in half from top to root and then thinly slicing them.Fry these onions or shallots in a properly heated wok or large saucepan until they turn soft and translucent. Add curry paste (red or green whichever you like most). In this curry, add chicken pieces and keep stirring.

Once the chicken pieces are totally immersed in the curry, it’s time to add the finely sliced lemongrass, fish sauce, sugar, kaffir lime leaves and coconut milk. Coconut milk is an important part of Thai cuisine; it is not only nutritious but lends a wonder aroma and taste to the preparation.

Back to the chicken curry in your wok, you should not bring it to boil on low heat and keep it uncovered for at least 15 minutes. It’s important to keep stirring the curry in between and check that it shouldn’t become sticky.

Add salt and pepper and some more curry paste if the taste is not coming as rich as you want. It’s time to garnish the curry with coriander and a bit of parsley leaves. Serve it with your choice of noodles or Thai rice or Pad Thai or even Basmati rice.
