Authentic Thai Jungle Curry

Here is another recipe for you to simply fall in love with Thai food. It is both healthy and tasty.A lot of green vegetables and herbs are used in it. It is a blend of sweet, bitter, sour and salty flavours. The recipe is quick and simple. Maximum nutrition is preserved while cooking. The ingredients used in this dish are healthy. Some ingredients have medicinal values too making them healthier to eat. This dish is also rich in fiber.

Thai salads, soups and many other dishes can be cooked in a very short time. Just make sure that you have all the ingredients ready.You can prepare the curry paste and chicken stock in advance and keep it in the refrigerator.

Lets go through the ingredients you need to prepare this dish.

1 lb.Thai apple eggplant
2 tbsp. vegetable oil
4 tbsp. red curry paste
1.5 lb. pork tenderloin
1/3-cup julienne strips
3 oz.Chinese beans
8 babycorns
1.5 cups Thai chicken stock
3 tbsp. fish sauce
5 kaffir lime leaves. ¼ tsp. salt
1-cup holy basil leaves.

Instructions

Pork tenderloins should be halved lengthwise and then sliced crosswise. Beans should also be cut into 1-inch pieces. Baby corns should be halved lengthwise. Thai apple eggplant can be substituted with Asian eggplant. Asian eggplant needs to be cooked while Thai apple eggplant can be eaten raw or crisp. Cut Asian eggplant into 1-inch cubes and toss with vegetable oil, put it in a baking dish and put it in a preheated oven at 380 degree Fahrenheit for 15 minutes. Or bake till crisp from outside and tender from within. Trim the eggplant into I inch pieces. Please do this just before you proceed since they tend to discolour.

Procedure

• Heat oil in a pan on moderate heat until warm.
• Add curry paste. If you want less spicy, you can reduce the quantity of curry paste. Cook for 3 minutes, stirring continuously. You will see that the colour changes to a darker shade.
• Add pork and stir-fry. Stir-fry should be done on high heat. After 2 minutes you will see that the pork is no longer pink.
• Now add eggplant, beans, baby corn and stock. Put the gas on low flame stirring time to time.
• Add fish sauce and lime leaves. Bring to a boil and then remove from heat.
• Lastly add basil.
