How to Cook Thai Chicken Fried Rice?

This is a simple yet tasty recipe. The best part about this is that you can use left over rice, which is usually kept in the refrigerator. It’s very easy to make and at the same time full of nutrition. This will taste just as good as the fried rice you get in your favourite restaurant and it is also a creative way to use left over rice. This dish can also be made quickly when you have unexpected guests, you don’t need to panic, simply follow this simple recipe. You can also use vegetables that are available and serve it with Thai chili sauce if you want it a little extra spicy.

Chicken fried rice

Ingredients

5 cups cooked rice
1 kg boneless chicken, preferably chicken breast
1 tbsp. soy sauce
1 red or green chili
3 cloves garlic
4 spring onions, sliced
5-6 mushrooms, chopped
½ cups peas
2 tbsp. vegetable oil
1 egg
½ cup chicken stock
3 tbsp. fish sauce
Lime juice of 1 lemon
2 pinches sugar
Salt
Pepper

Preparation

Take chopped chicken in a bowl and add soy sauce to it.
Heat the oil in a pan over medium heat. Drizzle oil and add onions.
Add garlic and chili.
Stir-fry and add chicken. You can see the colour of the chicken changing.
Add mushrooms and stir.
Add the fish sauce and all the other ingredients.
Keep the heat high and keep stirring. Add the egg and keep stirring at quickly.
Now add rice. Let it stand for 5 minutes for the ingredients to get absorbed. Stir delicately.
Remove from heat and taste it.You may add a little fish sauce or lime juice if required.

Use a non-stick pan to cook since it consumes less oil and as you are using eggs, it might stick to a normal pan, in that case just add a little oil. You can serve it with Thai chili sauce to make it spicy or top it with chopped green onions. If you are using left over rice take 2 tbsp of oil in your palm and work through the rice removing any lumps. Take care while adding stock because an excess can make your rice lumpy. You can also add a little extra oil to bring a shine to your rice.
