Ingredients

The recipe for making Poh Tak soup at home is very simple, and the good news is that the ingredients are fairly easy to find at your local grocery or speciality food store. To make Poh Tak Soup, you will need the following items;

  • 3 Cups Water or Chicken Stock
  • 100 Grams Mushrooms
  • 250 Grams Mixed Seafood (scallops, shrimps, calamari, or mussels)
  • 4 Lemongrass Stalks
  • 4 Kaffir Lime Leaves (torn in half)
  • 1 Tablespoon Lime Juice
  • 1 Teaspoon Fish Sauce
  • 1 Teaspoon Ginger (thinly sliced)
  • 1 Tablespoon Cilantro
  • ½ Teaspoon Sugar
  • Thai fresh chillies

How to Make the Poh Tak Soup

First, bring the water or chicken stock to a boil. At that point, add the kaffir lime leaves, sliced ginger, chillies and lemongrass. You will want to season it with fish sauce, sugar, and lime juice. Then, add the seafood and mushroom until the soup is fully cooked. The cilantro is there to garnish the soup once it is finished.

If you want to boost the flavour of the soup, you can add more fresh crushed Thai chillies in it. However, the Poh Tak Soup is already quite delicious, so you should not feel the need to add anything else unless your personal taste so desires.

If you want the broth to be clearer, consider blanching the seafood first before putting it into the soup after it has been brought to boil. One issue that you might face is overcooking the calamari or shrimp, so you may have to add them last to the soup and pull the pot off the stove once they are ready.

Poh Tak Soup makes for a great appetizer, providing a tasty way to start your dinner while still leaving plenty of room for the rest of your meal.
