How to make a delicious Pad Si-ew?

Ingredients

8 ounces of extra wide rice noodles

8 ounces of sliced mushrooms

1 tablespoon of sugar

2 tablespoons oyster sauce

1 egg scrambled

3 cloves of minced garlic

2 skinless and boneless chicken breasts

1/4 cup canola oil 

3 tablespoons of light soy sauce

1 tablespoon of dark soy sauce

2 teaspoons of fish sauce

3 cups of fresh broccoli florets/Chinese broccoli

INSTRUCTIONS

  1. The first step is to soak the noodles for 30 minutes in cold water. You can also opt to boil them for at least a minute and before draining steep them in the hot water for five minutes.
  2. Slice the boneless chicken breasts into thin strips and then toss the pieces with soy sauce.
  3. Add 2 tablespoons of canola oil at this point with medium to low heat.
  4. From both sides, sear the chicken for 2-3 minutes
  5. As the chicken cooks mix the dark soy sauce, fish sauce, soy sauce and oyster sauce in a bowl and whisk all of them together.
  6. Add in the egg and as it cooks chop it up with a spatula or spoon.
  7. Add in the broccoli, garlic, and mushrooms with the oil that is left.
  8. Before adding the noodles turn on the heat to allow the food to cook on high heat.
  9. Continue cooking the noodles until they are slightly crispy for 2-3 minutes.
  10. Finally, you can add in the sauce, make sure everything is well coated and let it cook for an additional 1-2 minutes or until all the noodles caramelize a little. At this point the dish is ready and you can serve it.
