It is believed that the creation of massaman curry occurred in the 17th century at the Court of Ayutthaya, with the assistance of Sheik Ahmad Qomi, a Persian merchant.


However, it was not until 1889 when the first actual recipe was recorded, a recipe that included chicken and bitter orange juice.
